2 T. fresh cilantro, chopped
juice of one lime
1 t. ground cumin
salt and pepper to taste
2 boneless, skinless chicken breasts, cubed
1 zucchini, sliced
1 onion, cut into wedges
1 red pepper, cut into 1-inch pieces
10 cherry tomatoes
In a bowl, combine oil, cilantro, lime juice and seasonings. Add chicken; stir to mix well. Cover and refrigerate for at least one hour. Thread chicken, zucchini, onion, red pepper and tomatoes onto skewers. Grill skewers over high heat, turning occasionally, for about 10 minutes, until chicken is no longer pink in the center. Makes 4.
